I just saw a post (from superhealthykids.com) that inspired me to try this recipe idea with our THRIVE Life Pancake Mix and our freeze-dried strawberries and blueberries.
I love that you can make these pancake pockets the night before and keep them in the fridge or freezer. My son has to get up at 6:00am for school, so now he can grab one of these, heat it up and eat one on the way out to school!
With the berry filling, you don't really need syrup. And because they can be eaten without a plate or fork, they are perfect for on the go!
The simple steps:
(You can use any pancake recipe or mix.)
Then, I reconstitute our THRIVE Freeze-dried Blueberries and Strawberries. (when doing this, just add a little water and stir around with a spoon)
You can use fresh fruit. Just chopped them up very finely.
Then, I poured about 1 1/2 tablespoon of the pancake mix onto a heated and well greased skillet. Then spread the pancake mix out a bit to thin it out some....so your pancakes aren’t too puffy at the end.
Then, I scooped a spoonful of the freeze dried berries to the center, and spread them out as best I could.
Then just drizzle a little of the batter over the berries.
Then, flip the pancake to cook the other side!
Eat and Enjoy!
