German Potato Salad at your next summer BBQ

German Potato Salad

Great summer side dish for your next BBQ. This recipe is so easy to make! I loved watching Chef Todd make this potato salad in April's THRIVE IT UP!



  • 4 c thrive potato dices (fd)
  • 2 c water
  • 3⁄4 c bacon, diced
  • 2 tbsp thrive chopped onions (fd), reconstituted
  • 1⁄2 c red wine vinegar
  • 1⁄2 tbsp mustard seeds
  • 2 tbsp oil
  • 1⁄2 tsp thrive chef's choice seasoning blend
  • 1⁄2 tsp thrive parsley (fd)
  • 1⁄2 tsp thrive chives (fd)
  • 1⁄4 tsp thrive basil (fd)
  • 1⁄4 c thrive green onions (fd)
  • 1⁄2 c mayonnaise


Mix potato dices with water and let sit. Meanwhile, sauté bacon until crispy. Remove bacon from pan with slotted spoon, leaving grease in pan.
Sauté onions in the grease for about 1 minute. Carefully add vinegar and mustard seeds and let simmer for 2 more minutes. Whisk in oil and seasoning blend. Pour warm dressing over reconstituted potatoes and mix together. Fold in bacon, herbs, green onions, and mayonnaise.
