I LOVE this recipe and the best part is that my family does too! You can even add some blueberries into the pancake batter along with some pecans....so YUMMY!
This recipe was inspired from my sister in-law, but I "tweaked" it a little for my family!
- 1 1/2 cup Freeze Dried Thrive Blueberries
- 1 1/4 cup water
- 3-4 Tablespoons of THRIVE Mango Passion Drink powder (you can use our apple or peach drink mix also)
- 1/4 cup white sugar
- 1/4 cup cold water
- 2 Tablespoons cornstarch
- 1/2 teaspoon almond extract
- 1/8 teaspoon ground cinnamon
In a saucepan over medium heat, combine the blueberries, 1 1/4 cup of water, mango passion drink powder, and the sugar. Stir gently, and bring to a boil.
In a small bowl, mix together the cornstarch, almond extract, cinnamon and 1/4 cup cold water. Gently stir the cornstarch mixture into the blueberry mixture so as not to mash the berries. Simmer gently until thick enough to coat the back of a metal spoon, 2 to 3 minutes. Remove from heat. For a thicker blueberry sauce add another tablespoon of cornstarch to mixture.
